Protein Blondies
YIELD: 6 bars TIME: 10 mins
Looking for a nutritious, light and oh so yummy protein bar? Look no farther. Here is an absolutely delicious protein bar with 11 grams of protein per serving. It doesn't have that dense and chewy texture that most protein bars do. It is light and airy, almost like a cake....and it's hard to resist having just one! Great for a post workout snack.
INGREDIENTS
1/3 cup flax and quinoa cereal
1/4 cup shredded coconut
40 grams vanilla protein (I used two scoops of a vegan one I got at target)
8 medjool dates
1/4 cup walnut halves
1 tablespoon coconut oil
ADD AFTER PROCESSING ABOVE:4 ounces applesauce
1 1/2 tsp baking soda
1/2 tsp baking powder
1/8 tsp sea salt
1/4 cup chocolate chips
1/4 cup brown sugar
1 egg
2 TBSP white wheat flour.
PREPARATION
STEP 1
In a food processor, pulse the first 6 ingredients quickly until the mixture resembles bread crumbs (not a paste). You may need to add a splash of water to get it going.

STEP 2
In a mixing bowl, combine the above mixture with the applesauce, baking soda and baking powder, sea salt, chocolate chips, sugar, egg and flour
STEP 3
Coat a 9x9 glass or metal pan with cooking spray or butter.
Bake in a pre-heated 350 degree oven for 20 minutes.
For convection baking, convect bake at 325 degrees for 18 minutes.
STEP 4
Cool before cutting.
TIPS:
Wrap individually and store in airtight container in the fridge.
