1-1.5 chicken breast cut into cubes.
3 TBSP Yogurt of your choice (plain, low-fat, greek)
6 garlic cloves
3 TBSP olive oil
Juice of 1 lime
1/2 tsp ground cumin
1.5 tsp all spice (not the same as garam masala)
1 tsp dried thyme
1/4 tsp oregano
1 tsp salt
1/2 tsp fresh crushed black pepper
1 TBSP tomato paste
1 tsp paprika
1/2 tsp turmeric
1/4- 1/2 cayenne pepper
Clean and cut the chicken into cubes
Mix all ingredients for marinade in a bowl. Add chicken and set aside. Marinate for at least 30 mins. Overnight is best.
Preheat your grill or grill pan
Skewer the chicken cubes and cook on each side for at least 3-4 mins or until done.
Let cool and remove from skewers
Enjoy with your choice of sides and garlic sauce.
If using wooden skewers, soak for at least 20 mins to prevent them from burning.Add onions, tomatoes, and bell peppers for a boost of color, flavor and nutrients!
