Fennel Cookies

YIELD: 30 cookies     TIME: 30 mins

 

Oatmeal, fennel seeds, brewer's yeast; these are ingredients that are thought to increase one's milk supply. But don't worry dads, brothers and husbands, eating these cookies will not adversely affect your manliness in any way! These natural ingredients are beneficial to even those of us who are not looking to increase our milk supply. (These are also known as lactation cookies)

 

INGREDIENTS
2 cups organic rolled oats or quick cook oats
1/2 cup organic coconut sugar
1/4 cup tapioca flour (or arrowroot flour)
1 TBSP fennel seeds, ground
1 TBSP chia seeds
1/4 cup Brewer's yeast flakes (optional)
1/2 tsp baking soda
1 tsp aluminum-free baking powder
1/2 tsp sea salt

1/4 cup coconut oil (melted)
1/2 cup almond butter
2 eggs
2 TBSP raw honey
1/2 tsp vanilla extract
1/4 cup chocolate chips (optional)
parchment paper
baking or cookie sheet

 

PREPARATION
STEP 1
Pre-heat overn to 350 degrees F
STEP 2
Put oats into food processor and blend unitl flour-like consistency.
Then,  grind 1 TBSP of Fennel seeds in coffee/spice grinder
STEP 3
Put all dry ingredients into a a large bowl and mix with wisk to combine.
STEP 4
In a smaller bowl, put all your wet ingriedients and mix well. (almond butter, melted coconut oil, eggs, honey, vanilla)
STEP 5
Pour wet ingredients into dry ingredients and mix with a clean spoon or spatula. Add nuts, chocolate chips or any other additives at this point.  Batter will be thick.
STEP 5
Line cookie sheet with parchment paper and form small flat balls with a heaped tablespoon of dough. 
STEP 7
Bake cookies in oven for 7-9 minutes. They ar done once they start browning around the edges.

COOKING TIPS:
Enjoy with a cup of green tea, skim milk or just by themselves!
Brewer's Yeast is difficult to find, but can be bought online. This is not the same as bread or any other yeast. I couldn't find initially, so I omitted from the recipe and they turned out great.
