Oven Fried Chicken

YIELD: 15-18 servings       TIME: 30 mins

Looking for an EASY "oven-fried" chicken tenders recipe that the kids will truly love. Crunchy on the outside and juicy on the inside? Then look no further. This recipe does not involve an assembly line of dipping, dredging and coating. A few simple steps and you're done....and all without getting marshmallow fingers:-)

Great for school lunches and playdates.
INGREDIENTS
2 chicken breast cut into 15-18 pieces, or 2 lbs chicken tenders
1.5 cups panko breadcrumbs, toasted (whole wheat preferred)

Marinade
1 TBSP mayonnaise
1 tsp fresh  minced garlic
1.5 TBSP yellow mustard
2 TBSP Whole wheat flour
1/2 tsp salt
1/2 tsp pepper
1/8 tsp onion powder
pinch cayenne pepper
1 egg
cooking oil spray

Optional seasoning for breadcrumbs:
1/2 tsp salt
1/2 tsp pepper
1/8 tsp onion powder
1/8 tsp garlic powder




 

PREPARATION

STEP 2
To toast the breadcrumbs, layer the Panko breadcrumbs in a thin layer on a large baking sheet,
spray with cooking oil and bake in preheated 375 degree oven for 10-15 minutes until golden brown.
Remove from oven and cool a bit. Oven times vary, so keep an eye out.

STEP 2
In the meantime, add all the ingredients listed for the marinade and mix well with a fork.

STEP 3
Add in the chicken and mix/coat well. I like to leave the chicken marinated overnight,
but 15-20 minutes will do if you are in a rush.

STEP 4
Use a fork or your fingers to pick up chicken and coat well with breadcrumbs.
Layer the chicken pieces on a parchment lined baking sheet for easy cleanup.
Spray with olive oil cooking spray.

STEP 5
Bake in preheated 375 degree oven for 15 minutes. Garnish with parsely. Enjoy with your favorite sauce.

Tips: Toasting the panko breadcrumbs first gives them the extra crunch and also the golden color. 

Depending on my mood and time, I do add the extra seasoning in the breadcrumbs after toasting them for a deeper flavor.
