CRISPY ROASTED BRUSSEL SPROUTS

Brussel Sprouts have gotten a bad rep in the past, but if only everyone knew the super goodness in them. Thankfully, as we get older, our tastebuds also evolve and I have found that I now appreciate the myriad of flavors from all sorts of foods that I avoided like the plaque as a child. Ha!

Brussel Sprouts are a fall season vegetable here in the US, my favorite season! They are super easy to prepare and should be included in your diet if you are trying to lose weight as they are one of those low calorie foods.

Brussel Sprouts are a superfood for skin too, chock full of vitamins A and C. They also contain a fair amount of vitamin K and plenty of calcium, with one cup being enough to cover the daily requirement. Brussel Sprouts also contain Vitamin D, which is great for bone health. With so many benefits, whats not to love? Give this super simple and delicious recipe a try. Include it as a side to any number of main course dishes. #brusselsprouts

INGREDIENTS PREPARATION

1 1/2 pounds Brussels sprouts

3 TBSP good olive oil

1 tsp kosher salt

1/2 tsp freshly ground black pepper

  1. Preheat oven to 400 degrees F.
  2. Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt and pepper. Pour them on a sheet pan and roast for 30 minutes, until crisp on the outside and tender on the inside, turning over half way through. Shake the pan from time to time to brown the sprouts evenly. Sprinkle with more salt and serve immediately.
